Salad with Lamb

Usually, in Greece, we cook the lamb either in the oven or as a stew. But, when we want to cook a lighter dish with meat as the basic ingredient, we opt either for chicken or for beef. This recipe comes to add one more option: lamb! And, to be more specific, a very delicious and healthy salad with lamb as the main ingredient. The perfect cooking of lamb is the medium-rare or medium, that means that it should be slightly red in the middle. That way, the lamb will remain tender and juicy, without losing any of its own juices!

Ingredients

Aromatic, Gluten-free

  • 8 lamb chops
  • 100 ml olive oil
  • 1 tbsp mustard powder Sunspices
  • 2 tsp dried thyme Sunspices
  • Salt, pepper
  • 400 gr baby spinach
  • 200 gr rocket salad
  • 20 cherry tomatoes, cut into halves
  • 150 gr goat’s cheese
  • 2 tbsp balsamic vinegar

Method


  1. 1. We preheat the oven to 200C/390F. In a bowl, we put 50 ml of the olive oil, the mustard powder, the thyme, salt and pepper and we mix very well. We rub the mixture all over the chops. We line a baking tray with parchment paper.
  2. We heat a non-stick frying pan until very hot. We add some olive oil and we put the lamb chops in the pan. We cook them for 1-2’ on each side until they get a nice color. This step is important because that way we sear the meat and we don’t let it lose its juices. After we have seared all chops, we arrange them on the baking tray and we roast for 10-15’, turning the chops half time through the cooking, so that they get a nice color on all sides. After 15’, we take the tray out of the oven and we cover the chops with aluminum foil. We let the meat rest for 5’.
  3. As the meat rests, in a large bowl we put the spinach, the rocket salad, the cherry tomatoes and the goat’s cheese. In a small bowl, we put the remaining 50 ml of olive oil and the balsamic vinegar and we whisk well. We pour the sauce over the salad. We mix very well and we serve in plates. We place 2 lamb chops on top of every salad, we drizzle with some olive oil and we enjoy!
