Crumble originates from Britain. Usually it is a sweet dish, but it can also be cooked as a savory one. Crumble was widely used during World War II, when there was a shortage of the ingredients needed for the preparation of the dough used for pies. To further reduce the use of rationed flour and sugar, people were using oatmeal or even breadcrumbs. Crumble became popular due to its simplicity. This recipe presents a crumble version using apples and pears which are flavored with cinnamon and clove.

Aromatic, For Vegetarians

  • 600 gr apples, peeled and cut in pieces
  • 300 gr pears, peeled and cut in pieces
  • 75 gr raisins
  • 125 gr brown sugar
  • 1 tsp cinnamon Sunspices
  • 1/2 tsp clove Sunspices

For the Crumble

  • 300 gr all-purpose flour
  • 170 gr brown sugar
  • 200 gr cold butter, cut in cubes
  • 1 vanilla Sunspices
  • Baking tray or oven proof dish 25x35 cm

  1. We preheat the oven to 180C/350F. In a pot we put the apples, the pears, the raisins, the sugar, cinnamon and clove and we add 50 ml water. We cook them on medium-high heat for about 15’, until the apples begin to soften and can be pierced with a fork. We remove from the heat and let is aside until we prepare the crumble.

  2. For the crumble: In a bowl, we put the flour, the sugar and the vanilla and we stir. We add the butter cubes and we rub them in with our fingertips until the mixture looks like breadcrumbs. We keep rubbing until all the mixture looks like breadcrumbs (all the flour will have become pale yellow in color).

  3. We butter the ovenproof dish or the baking tray. We drain the apples, reserving 2-3 tablespoons of their syrup. We spoon them into the tray and we add the syrup. We slightly flatten them. We sprinkle the crumble mixture over the top. We bake for 30-40 minutes until the crumble is browned. It can be served either warm or at room temperature.
