Pancakes with Blueberries

The clove was for many years the cause of skirmishes among colonialists who wanted to gain the monopoly in its production and trade. Since the ancient times, clove was known for its properties. Archaeologists discovered in Syria a ceramic vessel that contained cloves dated around 1721 BC. Clove gives a unique aroma and taste wherever it is used, but it should be used in small quantities otherwise it makes the food bitter. It also has many medicinal uses due to the eugenol it contains.

Ingredients

  • 240 gr all-purpose flour
  • 1 tsp baking powder Sunspices
  • 2 eggs
  • 200 gr Greek yogurt
  • 100 ml seed oil
  • 3 vanillas Sunspices
  • 100 gr sugar
  • 2 tsp baking soda Sunspices
  • 150 gr blueberries, fresh or frozen
  • 2 tbsp poppy seeds Sunspices
  • Butter

Method

  1. In a bowl we put the yogurt, the eggs, the seed oil and the sugar, and we mix well until the mixture is uniform. We add the flour, baking powder, baking soda, the poppy seeds, the vanillas and we stir lightly. Finally, we add the blueberries and stir.

  2. We melt some butter in a pan on medium-high heat. We pour 2 tablespoons of our batter into the pan. We repeat one more time so that we have two pancakes in our pan, keeping some distance between them as they will rise. We cook the pancakes for about 2-3 minutes on each side, checking if they are cooked thoroughly and if they got a nice color. We flip them and we wait until the other side is also cooked. We remove the pancakes from the heat and we place them in a platter. We cover them with a towel so that they remain warm. Wipe the pan with some kitchen paper, melt some more butter and repeat the above process with the remaining batter. We sprinkle them with powdered sugar and we serve.
