Strudel with Apples

The strudel is directly associated with the Austrian cuisine. It is a dessert of layered pastry with usually a sweet filling which consists mainly of apples, raisins and cinnamon, while other spices can also be used. The oldest known Strudel recipe is from 1696 in a book at the Vienna City Library. It is the perfect dessert for your evening coffee or tea.


Aromatic, For Vegetarians

  • 120 gr butter
  • 60 gr breadcrumbs
  • 6 thin filo pastry
  • 750 gr apples, peeled and cut in 1/2 cm cubes
  • 1 ½ tsp cinnamon Sunspices
  • 80 gr sugar
  • 80 gr raisins
  • 50 gr chopped walnuts (optionally)
  • 80 gr powdered sugar
  • Powdered sugar for sprinkling


  1. We preheat the oven to 180C/350F and like a baking tray with parchment paper.

  2. In a frying pan we melt 20 gr of the butter and we add the breadcrumbs. We cook until golden brown, for about 3 minutes. In a bowl, we put the apples, the cinnamon, the raisins, the sugar, the walnuts and the toasted breadcrumbs and we mix very well.

  3. We melt the remaining butter in a pan. We place a piece of parchment paper on the counter. We place one phyllo sheet on parchment with long edge parallel to us and we drizzle melted butter over the sheet without touching it with the brush. We repeat the process with the remaining phyllo sheets and butter.

  4. After we have used all phyllo sheets, we evenly arrange the apple mixture on the phyllo, leaving a 3cm border at the top and sides. We fold the sides of the phyllo over the mixture. Then we roll the phyllo away from us, folding the bottom edge over the mixture, and then the top edge. We press firmly to seal. To transfer it to the prepared sheet. We brush the top with some melted butter and we bake for 45’-1 hour until golden brown. We remove from the oven, we sprinkle with powdered sugar, we cut it in slices and we serve.
