Pork Stir Fry (Tigania)

The pork "tigania" is one of the classic and most favorite Greek mezes, which accompanies perfectly tsipouro or ouzo! Traditionally, it was prepared at Christmas, while depending on each one’s preferences an alcohol can also be added, usually tsipouro or ouzo.

Ingredients

Aromatic, Gluten-free

  • 1 kg pork (preferably deboned neck), cut into pieces
  • 4-5 tbsp olive oil
  • 1 onion, cut into slices
  • 1 green pepper, cut into slices
  • 1 red pepper, cut into slices
  • 100 ml tsipouro or ouzo (if not available use vodka)
  • 2 tsp Carino barbecue seasoning Sunspices
  • 1 tbsp mustard powder Sunspices

Method

  1. Using some paper towel, we pat the pork pieces dry. We put them in a bowl and we add the Carino barbecue seasoning and we stir well. We let aside.
  2. In a large frying pan or saucepan, we heat the oil. We sauté first the onion for 3’ until it softens and gets a nice color. We add the peppers and we sauté them for 4-5’, until they begin to soften. We add the pork and we cook it until it gets a nice color on all sides, for about 5’. We add the tsipouro or ouzo and we let it evaporate. We add 1 cup warm water, we lower the heat and we simmer until the liquids evaporate and the meat is tender. We dissolve the mustard into 2 tbsp water and we add it to the pot. We stir and we cook for 3’ more minutes. We serve and eat immediately.
