Greek Avgolemono Chicken Soup

The avgolemono chicken soup is a traditional comfort food. A food whose every mouthful fills us with warmth and comfort. A food made especially for the cold nights of the winter or for the days we are sick. Besides it is known that the avgolemono chicken soup is appropriate for the treatment of the flue, since it is a light and very nutritious dish. You can cook either a whole chicken or a chicken cut into pieces. If you find, use free-range or organic chicken, because they have a richer taste.



  • 1.5-2 kg chicken, cut into pieces
  • water
  • 1 chicken broth cube
  • 1 onion, roughly chopped
  • 4 tbsp olive oil
  • 3 bay leaves Sunspices
  • 2 tsp dried celery Sunspices
  • Salt, pepper
  • 300 gr rice
  • 2 eggs
  • Juice from 1 lemon


  1. In a large pot, we put the chicken and cover it with water. We add the broth cube, the onion, the olive oil, the bay leaves and the dried celery. We season with salt and pepper and we bring to a boil. Without putting the lid on the pot, we reduce the heat and cook the chicken for about 1 hour, until it is thoroughly cooked and falls off the bones.
  2. When the chicken is cooked, we remove it from the pot and transfer it to a plate. We strain the broth left in the pot, so that we remove the bones, and we bring it to a boil. We add the rice, season and cook for about 20 minutes, until the rice is ready. While the rice is being cooked, we pull the meat off the chicken bones. When the rice is ready, we add the chicken meat, stir and remove the pot from the heat.
  3. We prepare the avgolemono  (eggs and lemon). In a bowl we whisk together the eggs and the lemon juice. We gradually add 6-7 ladles of the broth, constantly stirring so that the eggs aren’t cooked. We pour the avgolemono over our food and we shake the pot in circular motions so that the avgolemono coves all the food. We serve the soup in deep plates, we add some freshly ground pepper, and, if we want, we add some more lemon juice. We serve with fresh, warm bread!
