Bruschetta is one of the easiest to make and most delicious Italian appetizers. They can be served as part of a meal, as a healthy snack or even at a buffet. This recipe is very aromatic since it uses thyme and rosemary. As a result, there is no one who can resist bruschetta. In order to stand as a light meal, mozzarella is also added to smell more like Italy!
Aromatic, For Vegetarians
4 tbsp olive oil
300 gr cherry tomatoes
4 tsp dried rosemary Sunspices
3 tsp dried thyme Sunspices
1/8 dried garlic Sunspices
120 gr fresh mozzarella cheese, cut into small pieces
4 large bread slices, toasted
We preheat the oven to 200C/390F. We put the cherry tomatoes to a pan. We add the olive oil, the rosemary, the thyme, the garlic and a pinch of salt. We mix very well and we cook for about 10 minutes.
We remove the pan from the oven and spoon the cherry tomatoes over the bread slices. We top each bread slice with some mozzarella cheese and we bake for another 1-2 minutes, until the cheese is melted. We serve in plates and drizzle each bruschetta with olive oil. It pairs very well with some rocket salad!
