Chili marmalade is a marmalade only for adults, and especially the lovers of the more special flavors. Chili marmalade is sweet, sour and spicy, having a very interesting taste. This marmalade is not eaten with toast, but it is a perfect accompaniment to a plate of cheese and cold meat. Try it and you won’t regret it!

Ingredients

Aromatic, Hot, For Vegetarians, For Vegans, Gluten-free

  • 400 gr ripe tomatoes or cherry tomatoes
  • 1 onion, chopped
  • 1 large garlic clove, chopped
  • 1 tsp ginger Sunspices
  • 1-2 dried red peppers Sunspices, crushed
  • 125 ml white wine or apple vinegar
  • 150 gr brown sugar

Method

  1.  We cut the cherry tomatoes in half (if using regular tomatoes, we cut them into large pieces. In large heavy pot we put the tomatoes and we add the onion, the garlic, the ginger and the crushed dried red peppers. We also add the sugar and the vinegar. When our mixture comes to a boil, we lower the heat and we simmer for about 30-40, occasionally stirring so that the marmalade doesn’t stick on the pot. The marmalade is ready when it remain in place when drawing a line through its middle. A better way to check is by placing a teaspoon of the marmalade onto a small plate and putting it in the freezer for 30 seconds. If, when drawing a line through the middle of the marmalade, the marmalade remains in place, it is ready. Otherwise, we return the pot to the heat and we cook for some more minutes.

  2. We store the marmalade in sterilized jars and we place them in the refrigerator. It is best served with a platter of cheeses and breadsticks, while it also pairs well with pies containing cheese and can give a unique taste to your toasted sandwiches.
