Pasta with Tomato Sauce and Grape Molasses (Petimezi)

The grape molasses (petimezi) is the must reduced until it becomes dark and syrupy. It can be stored for a long period of time. The taste of the grape molasses is sweet, rich, complicated, with some bitter undertones. Along with the honey, it is a perfect alternative to sugar and surely a healthier one. It is used both in cooking as well as in pastry making.

  • 500 gr pasta
  • 2 tbsp olive oil
  • 1 garlic clove, crushed
  • 1 onion, chopped
  • 800 gr tinned grated tomatoes
  • ¼ - ½ tsp crushed red peppers
  • 1 tsp balsamic vinegar
  • 2 tbsp grape molasses
  • 1 tsp dried basil Sunspices
  • 5 sundried tomatoes, roughly chopped
  • Hawaiian red salt
  • Salt
  • Mixed pepper Sunspices


  1. We warm the olive oil on medium heat and we add the chopped onion. We sauté it until it starts caramelizing. We add the sundried tomatoes and sauté them for 2 minutes.  We add the grated tomatoes, the crushed red peppers, the balsamic vinegar, the grape molasses, the dried basil, the Hawaiian red salt and pepper. We simmer for about 45 minutes, until all liquids evaporate and our sauce thickens.
  2. We boil the pasta in salted water until al dente, for about 8-10 minutes. When cooked, we strain them and add them to the sauce. We stir very well and serve it with some additional black pepper.
