Warm Salad with Green Beans and Spearmint

Many times we want to eat a salad, but we are tired of the classic salads with tomato, cucumber and lettuce. This recipe is the perfect solution for you. It is quick, easy, tasty, healthy and very aromatic! You can eat it as lunch, light dinner, you can take it to office, since you can eat it at room temperature! If you want to make it even more special, you can add some toasted pine nuts as well!


Aromatic, For Vegetarians, For Vegans

  • 750 gr baby potatoes, cleansed and cut into halves
  • 500 gr frozen green beans
  • 200 gr feta cheese, crumbled
  • 2 spring onions, chopped
  • 100 ml olive oil
  • Juice from ½ lemon
  • 1 tbsp dried spearmint Sunspices
  • 1 tsp dried dill Sunspices
  • Salt
  • Green pepper Sunspices


  1. In a saucepan with water we put the potatoes and we cook them for about 15-20 minutes, until they are fork tender. Halfway through cooking, we add the green beans, which need about 10 minutes of cooking. We want the beans to be tender and crispy, in order to maintain their taste and shape.
  2. We strain the vegetables. If you want a cold salad, we rinse them under cool water. We put them in a bowl and we add the feta cheese, the spring onions, the spearmint, the dill, salt and green pepper. We stir very well.
  3. Finally, we add the olive oil and the lemon juice and stir very well. We serve the salad in plates with some toasted bread and drizzling with some olive oil.
